Rosemary, Common

Rosmarinus officinalis

Rosemary has an open, bushy habit with gray-green, pinewood-scented leaves and light blue flowers. Looks great in the garden as a specimen or clipped hedge. An essential ingredient for lamb dishes, roast meats, sausages, fish, poultry and potatoes. Use the pine-scented leaves in potpourri. Preserve by air-drying. Fresh leaves can be used to make an herbal vinegar. Store dried herbs in an airtight glass or ceramic container away from light. Keep leaves whole, until used, to maintain their flavor.
